DENMARK'S FINEST is the true authentic Imported Danish Havarti. It is rich in tradition and has always had the best quality available.
The Havarti cheese is partly inspired by the Tilsit cheese, which was developed in the 1870’s by Mrs. Westphal in Tilsit – a town in East Prussia. The Tilsit cheese weighed 3.5 to 5 kg and had a cylindrical form with a diameter of 20-30 cm and a height of 8-10 cm.
In year 1900 wholesaler Halkier started importing the Tilsit cheese to Denmark, but the Danes did not like the taste of the product. In 1921 the Swiss, G. Morgenthaler, started producing the Tilsit cheese in Denmark together with a Danish dairy in Ruds Vedby. The production was established with an eye on export. During the 1930’s many Danish dairies started producing the Tilsit cheese to get a share in the export success. Over the years the Danish dairies switched from the cylindrical form to the loaf form.
In 1952 the size of the cheese and the method of production was changed. The new cheese type was named Havarti.
The name Havarti was chosen to commemorate Mrs. Hanne Nielsen and her husband for their great contribution in the area of cheese production, which they practiced at their farm in the previous century. The farm was called “Havartigaard” (= The Havarti Farm).
